Pancake Tuesday

This day last week, I was stuffing myself with pancakes and crepes! Unfortunately I don’t have the time this week or I’d be indulging all over again! I love pancakes. And by pancakes, I mean scotch pancakes. The lovely thicker type. I especially like the bigger scotch pancakes, toasted and buttered with sugar 🙂

Scotch Pancakes

So last Tuesday morning, I enjoyed these shop bought pancakes for breakfast and then for lunch I made some of my own 🙂 My mum randomly bought me a crepe maker for Christmas, like the ones you see used at markets! I’d only used it once with not much luck. I wasn’t able to get the hang of using the wooden batter spreader. The professionals make it look so easy! So Pancake Tuesday was perfect for giving it another go! The recipe I used came with the crepe maker, although I adjusted it a little.

  • 110g flour (I used 150g as I thought the batter was quite runny)
  • 2 eggs
  • 225ml milk
  • 1 teaspoon sugar (I have a sweet tooth!)
  • oil/butter for frying

  • Sieve the flour into a bowl and add the sugar if using
  • Make a well and add the eggs
  • Whisk the flour and eggs
  • Gradually add the milk whilst continuing to whisk
  • Ladel a spoonful onto your greased crepe maker or frying pan
  • Let it cook for 60 – 90 seconds before flipping 🙂
  • Let it cook again for 60 -90 seconds
  • Top with your favourite toppings and munch!
  • Eat until you can eat no more!

As you can see I mastered the art of crepe making! I discovered the height of the bench or table you’re working on makes all the difference! The first time I used the crepe maker, the bench was quite high. This time I used the kitchen table which is much lower. This gives a great angle for being able to spread the batter around gently with your wrist. This was proven at dinner time, when I tried it on the bench again. The result was messy, flimsy, hole filled crepes. If you could even call them crepes! So I moved back to the kitchen table and whipped up lots of perfect crepes for all the family! I was really enjoying pretending to serve up crepes at my own market stall 🙂 I could get used to it!

There are lots of toppings to choose from, both sweet and savoury. I stuck to my favourites, butter and sugar, lemon and sugar and Nutella and Banana. (Yeah, savoury crepes just don’t make my mouth water!) If I had of had After Eights, I would have chopped them up and filled some with them too. Try it! It’s one I discovered in Germany!

I wish I had the time to make some more today. They were delicious!
